BEHIND PRODUCTION
Yellow Bourbon Los Nogales is the result of meticulous dedication at the Los Nogales farm in Pitalito, Huila, Colombia. Founded nearly 80 years ago by Ricardo Hernández and Concepción Castillo, the farm has a rich coffee legacy passed through generations. Under the leadership of Ricaurte Hernández and, later, his son Oscar Fernando, the estate embraced innovation and sustainability.

After winning Colombia’s Cup of Excellence in 2005, the family continued to push forward, focusing on environmental stewardship, research, and quality. Today, Los Nogales stands as a symbol of resilience and excellence, combining tradition with cutting-edge coffee practices.
LOCATION
Situated in the lush southern mountains of Huila, Pitalito is known for its mineral-rich volcanic soils, high elevations, and unique microclimates. The farm sits between 1,870 and 2,000 meters above sea level, where warm days and cool nights slow cherry maturation, encouraging complex sugar development.

This terroir is renowned for producing coffees with vibrant acidity, elegant fruit profiles, and deep sweetness, making Huila one of the most prestigious coffee-producing regions in Colombia.

During our visit to Colombia this year, we had the incredible opportunity to explore El Vergel farm and meet the Bayter family, who are the proud owners.

Notably, we established a direct relationship with Shady Bayter, the owner of the Forest company, which imports coffee to Europe.

Thanks to this special connection, we were able to bring this unique Colombian coffee directly to our roastery. It's a testament to the power of personal connections and the journey of our coffee from farm to cup.

Process

The journey of Yellow Bourbon Los Nogales starts with handpicking perfectly ripe cherries, followed by careful density sorting to remove defects. The cherries are depulped and undergo anaerobic fermentation for 120 hours in hermetically sealed blue tanks.
